Mint Couscous with Almonds

  • 1 can 14oz vegetable broth
  • 1 red onion, chopped
  • 1/2 cup sliced apricot
  • 1 tbsp olive oil
  • 1 cup dry couscous
  • 100g / 3oz toasted, sliced almonds
  • 2 tbsp mint leave, chopped
  1. Combine broth, onions, apricots and oil in medium saucepan. Bring to boil on medium-high heat.
  2. Stir in couscous; cover. Remove from heat; let stand 5 min. Fluff couscous with fork.
  3. Add almonds and mint; mix lightly.
