- 1 can 14oz vegetable broth
- 1 red onion, chopped
- 1/2 cup sliced apricot
- 1 tbsp olive oil
- 1 cup dry couscous
- 100g / 3oz toasted, sliced almonds
- 2 tbsp mint leave, chopped
- Combine broth, onions, apricots and oil in medium saucepan. Bring to boil on medium-high heat.
- Stir in couscous; cover. Remove from heat; let stand 5 min. Fluff couscous with fork.
- Add almonds and mint; mix lightly.
