Grilled Leg of Lamb with Rosemary & Orange Marinade

 My rosemary plant is no more thanks to my super-active mother in law who had weeded it. So when I opened President's Choice rosemary pack, I imagined a simple rub for a lamb leg. The recipe inside the container looked so good and so simple that I couldn't help whisking together a quick fragrant and colorful marinade:

Rosemary and Orange Marinade
(adapted from the President's Choice Rosemary pack)
Marinated Lamb
Rind of 1/2 orange
Juice of 1/2 orange
1/4 C olive oil
2T chopped rosemary
2T white wine vinegar
2 minced garlic cloves
salt pepper to taste

T - tablespoon
t - teaspoon
C - cup

Marinate meat for at least 2 hours and grill following your favourite method.

Chicken BBQ Marinade

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 5 tbsp olive oil
  • 5 tbsp Dijon mustard
  • 1 tsp salt
  • 2 lb / 1kg chicken

Honey-Ginger Grilled Salmon

Adapted from Allrecipes.com

This terrific recipe is light and it works for all types of meat and seafood, including crustacean. Can be baked in the oven.

Servings: 4 
Time: 1 hour
  • 1 tablespoon ground ginger
  • 3 cloves garlic, pressed
  • 1/3 cup soy sauce
  • 1/3 cup orange juice
  • 1/4 cup honey
  • 1 green onion
  • 1 salmon fillet, (500g) 
  1. In a large self-closing plastic bag, combine ginger, garlic, soy sauce, orange juice, honey, and green onion; mix well. Place salmon in bag and seal tightly. Turn bag gently to distribute marinade. Refrigerate for 15 to 30 minutes.
  2. Preheat an outdoor grill for medium heat and lightly oil grate.
  3. Remove salmon from marinade, shake off excess, and discard remaining marinade. Grill for 12 to 15 minutes per inch of thickness, or until the fish flakes easily with a fork.

Meat Kebab Marinade

  • 1 cup vegetable oil
  • 3/4 cup soy sauce 
  • 1/2 cup lemon juice
  • 1/4 cup Worcestershire sauce
  • 1/4 cup mustard
  • 2 tsp coarsely cracked black pepper
  • 2 cloves minced garlic
  1. In a large resealable plastic bag, combine the oil, soy sauce, lemon juice, Worcestershire sauce, mustard, ground black pepper, garlic.
  2. Mix well, and add your favorite meat. Seal the bag, and marinate in the refrigerator for 4 to 24 hours.

Honey Ginger Marinade

This light and lovely marinade is excellent for grilled fish, chicken and even beef. The ingredients are per one pound / 500g of meat / seafood. Mix all of the ingredients, pour over the meat, put the container in a fridge and let it marinate for at least an hour.
  • 1 teaspoon ground ginger
  • 2 garlic cloves, minced
  • 1/3 cup soy sauce
  • 1/3 cup orange juice
  • 1/4 cup honey
  • 1 chopped green onion
