- 250 smoked salmon
- 2 thinly sliced scallions
- 2 tomatoes
- 1 lemon
- 1 teaspoon capers
2. In a small bowl mix the juice of 1/2 lemon (2 T), 3-4 T olive oil, some lemon zest, and chopped scallions. Arrange the pieces of salmon on a plate, top with the mix from the bowl.
